Meet Joel Alex, founder and maltster of Blue Ox Malthouse in Lisbon Falls. Alex and his fabulous team of six produce MOFGA-certified organic malted barley, wheat, rye and oats – all sourced from Maine farms. They sell to more than 100 breweries, most in Maine. When Blue Ox opened in 2015, it was the largest floor malt house in North America. Floor malting is the traditional method of malting grain on germination floors rather than in mechanized boxes. Alex says, “Malting is a process similar to sprouting before we bake the grain back down into a dry product. We do this to get a fermentable liquid because if you add raw grain to hot water you get porridge!” Look for the MOFGA label where you shop. Ask for Blue Ox Malt where you drink.
